On Bellechasse Street, Feuilleté fits into a few square metres and handles the mornings of a good part of the neighbourhood. Josh, the pastry chef, works mainly in laminated dough and dry pastries: butter croissants, fruit-filled danishes, cookies — including a chocolate-clementine that returns each winter — and savoury viennoiserie for breakfast.
