Stefano Faita, Michele Forgione and Yann Turcotte opened this Drolet Street counter with a simple idea: beat the chains at their own game. The room borrows from 1950s and 60s Quebec snack bars — counter, booths, neon — but everything happens on the plate: a patty smashed on the flat-top, house-baked buns, a cheeseburger held at snack-bar prices.
