Founded in 2015 on Saint-Zotique Est, San Gennaro combines an Italian neighbourhood café with a Roman al taglio pizza counter, and takes both equally seriously. Fabrizio Covone developed an al taglio recipe borrowing from the three Roman pizzerias where he worked: the crunch of Roscioli, the white focaccia elsewhere, his own hydration.
